Chili’s Southwest Egg Rolls, Dollar Tree style!
Can you really recreate them for way less? Yes, and they’re crispy perfection. Grab 10 flour tortillas, 2 cans of chicken (9 oz total), ranch, jalapeño sauce, corn, black beans, chili lime seasoning, and shredded cheese. Mix chicken, beans, corn, seasoning, and cheese. Trim tortillas into squares, seal with flour-water paste, stuff, roll, and fry till golden. Blend ranch and jalapeño sauce for the dip. Slice on the diagonal and serve.

You could use the leftover tortillas bits to make migas. Or you could fry them up, toss with some leftover seasoning, and use as a salad garnish.
A shallow pan fry works too, it takes a little longer. Use Mexi-corn for red and green colors. Instead of black beans, try frozen black bean veggie burgers; pan fry and crumble before assembly. Good stuff.

I wonder if chopped pamento, or drained diced tomatoes would work to add a dash of red?
I know diced tomatoes works really well with black beans and corn. A classic combo (plus some seasoning…I use Taco Seasoning).
