AROMATICS
• Ginger (1 Tbsp)
• Garlic (1 Tbsp)
• Spring Onion (1/4 Cup) white parts
• Sichuan Peppercorns (2 Tbsp)
1. Pat steak dry and freeze for 1 hour then slice thinly against the grain then add to a bowl
In a separate bowl mix together the egg white, soy sauce & cornflour then pour onto steak mix well and leave for 15 minutes
2. Toast peppercorns in a dry pan on medium heat for a minute or 2 stirring constantly or shaking the pan till fragrant then set aside
3. Prepare sauce in a bowl by mixing together the Doubanjiang paste, chilli crisp, soy sauce, rice vinegar (I also added 1 + 1/2 tsp of balsamic vinegar for a substitute for black vinegar although not traditionally used)
4. Add a few tbsps of neutral oil to a pan on medium high heat and fry steak pieces for a few minutes on each side to brown set aside
5. Give pan a wipe and add about 1 tbsp of oil on medium heat and add the garlic, ginger & spring onions for 2 minutes
6. Add peppercorns and the beef for about 1 minute then add in sauce mix well and warm through till it thickens a bit then serve
7. I garnished with the green part of the spring onions, red chilli’s, sesame seeds & crushed Sichuan peppercorns
