This is a great spicy hot sauce to put on ALL Thai food or rice dishes. My local Thai restaurant finally gave me their recipe after I was taking up too much of their To Go containers of hot sauce. I made two versions of the sauce. The one on the left has garlic in it and the one on the right is just peppers.
Hot Sauce Ingredients:
18 Thai Chili Peppers
1 or 2 Cloves of Garlic
1 Cup of Fish Sauce
1/2 Cup of Lime Juice
*Any 2-1 Ratio of Fish Sauce to Lime Juice will work.
Directions:
Chop up the peppers into thin disks and divide equally into two piles.
Peel and mince garlic.
Combine Fish Sauce and Lime Juice in a large bowl or large mason jar. Stir to combine mixture.
Using a funnel, put half of the peppers in one woozy bottle and the other half in another bottle. (Mason Jars work too)
Put minced garlic into one of the woozy bottles.
Fill both bottles with Fish Sauce/Lime Juice mixture.
The sauce gets better and spicier with age. Wait 3 or 4 days until you try it for best results.
The Garlic version will last about 2 week and the pepper only version will last about a month.
