Inspector Comments:
Dirty mop water not dumped, sitting in storage area.The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.Mops are not being hung to air dry.Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Corrected.Food facility Person in Charge failed to follow the conditions of exclusion and restriction as required in the PA Food Code. Open/draining wounds on face and neck not properly covered.Plastic storage containers, holding food are cracked/broken and/or have broken lids and need discarded.Food in the walk-in cooler area stored open with no covering. Corrected.Observed shelving in several refrigeration units that were damaged/rusted and no longer cleanable that need replaced.Observed boxes of food stored directly on the floor in walk-in cooler, rather than 6 inches off of the floor as required.Observed bowls, being used as scoops in dry food containers; subjecting to potential contamination.Observed deeply scored cutting boards/prep areas not resurfaced or discarded as required.Observed the interior of the microwave to have food residue build-up and was not clean to sight or touch.Soda dispensing machine and backsplash, food contact surfaces, were observed to have a built-up residue and was not clean to sight and touch.Prep/cooking and/or storage areas of the food facility is extremely dirty, dusty, and in need of cleaning.Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
