Roasted Bell Pepper Spread Bean 9/100 #100beans

Makes about 300ml

Ingredients:
1 (220g) red bell pepper
1 (100g) small onion
1 tsp cooking oil
1 tbsp tomato paste
90g canned chickpeas, drained
25g sunflower seeds
1 ½ tsp lemon juice
¼ tsp sweet paprika
¼ tsp smoked paprika
½ tsp garlic powder
⅛ tsp oregano
⅛ tsp black pepper
¼ tsp salt

Instructions:
1. Preheat the oven to 220C and line a small tray with parchment paper.
2. Cut 1 bell pepper in half and remove the core and stem. Cut 1 small onion into quarters. Place both vegetables on the tray, bell pepper cut side down and rub everything with 1 tsp of oil. Bake for 20-25 minutes.
3. Once the vegetables are done, transfer the bell pepper to a heatproof bowl and cover with cling film. Let it steam for about 10 minutes.
4. In the meantime, add the roasted onion, and the rest of the ingredients into a food processor. If you want the spread to be a little chunky instead of smooth, leave 1 tbsp of the chickpeas aside for later.
5. Uncover the bell pepper and remove the skin. Add to the food processor and blend everything together for 2-3 minutes until smooth. For some chunkiness, add the remaining chickpeas and pulse a few times. Store in the fridge in an air-tight container for up to 4 days.

  5. Incidentally, how well would subbing the bell peppers for bell pepper paste (thanks, turkish grocery stores!) and adding extra onsions for roasted/smoky flavour work, one wonders…

  10. Culinary and botanical terms are not equal. Tomato is a fruit but a vegetable too for example. I'm still not making a fruit salad with it. Thou is pico de gallo technically a fruit salad then cause jalapeños are also fruit? 😅
