DAVISON TWP., MI – A mid-Michigan food truck that has grown in popularity with its nachos, birria tacos and tacos being dished out at businesses, festivals and events has found a new home in a local farmers market.

Owned and operated by sisters Jessica Jennings and Sarahi Mercado, MexiCrunch has found itself a legion of followers in Genesee County as well as social media, where it’s approaching 10,000 followers on its Facebook page.

Now, the food truck will be able to dish out its menu items three days a week at the Davison Farmers’ Market, located at 8110 E. Court St. in Davison Township.

Jennings said they had a soft launch this week at the market.

The opportunity for the new spot was almost “a coincidence,” she said.

They’d gone to the market to shop and saw there was an open stall where another food truck had operated.

“It was perfect timing that the location became available,” Jennings said.

She noted they need a spot as they tend to close for a few months in the winter season.

Making the move has been a goal since Jennings approached her sister after opening a food truck.

“I’m the oldest and I was a stay-at home momma, and I wanted to do something since my kids are in school now. I asked my sister. She’s the youngest. My siblings thought it was a horrible idea,” Jennings laughed. “We fought a lot.”

But opening the truck in 2023 has grown and cemented their bond.

“If I’m nervous about something, she’s got it,” Jennings said, as well as the pair talking out any ideas they may have for the business. “It’s been a blessing.”

Those ideas include updating the menu to suit the suggestions of customers and staying on top of food trends.

“We always like to bring something new for our customers to come and experience, something different so it’s not the same every time they come,” Jennings said.

That includes secret menu items for customers that follow MexiCrunch on Facebook.

The business is known for its birria tacos, which Jennings noted are their number one seller, but they’ve also offered gorditas, birria ramen noodles and birria egg rolls.

“We do Mexican food but try to make it a little more modern,” she said, with the menu including recipes from their mother.

With the new space at the market, Jennings said “Those are items we’ll be able to have on hand more” along with working on requests that’ve been made for vegan and gluten-free options.

“We’ve been so grateful for our customers,” she said. “We have a lot of regulars that come and are always supporting us.”

Part of the reason behind opening a spot in the market was to have a place for customers to come, with the location offering a place for them to order, sit down and eat as well.

“They follow us all over…without them we would definitely not be here,” Jennings said. “They go and tell their friends about us and share our posts on Facebook. Those customers have really become family to us.”

Jennings said she’s excited for the community they’ll build with all the vendors at the market and offering another choice for customers as they peruse the other vendors selling produce, meat and other offerings while gaining some new customers.

Opening the stall at the market doesn’t mean the business won’t still have a food truck out and about in the area.

“It’s a lot of multitasking but we have a great team and they are awesome,” said Jennings. “We couldn’t do this without all of our team.”

MexiCrunch will be open from 9 a.m. to 5 p.m. Tuesday, Thursday and Saturday at the market.
