Chicago, prepare to add another name to the city’s never-ending pizza debate.
Pizzeria Gabbo, a 60-seat neighborhood pizzeria and bar from Lettuce Entertain You Restaurants, is slated to open this fall—and it’s bringing not one, but two distinct styles of crispy pie to the table.
The concept comes from Executive Partner and Divisional President Marc Jacobs and Chef Partner Andrew Ashmore, best known locally for his work at Beatrix.
Choose between Chicago Thin & Crispy and New York-style pizza
The menu will center on two pizza styles: Chicago Thin & Crispy and New York Crispy, the latter being Ashmore’s crispier riff on a classic New York-style.
Beyond pizza, expect antipasti, salads, pastas, and soft-serve gelato rounding out the Italian-leaning lineup.
For Ashmore, the project is personal. “Having a small pizzeria has always been a dream of mine,” he said. “The first restaurant I ever worked in was a mom-and-pop Italian restaurant in Michigan and I always enjoyed the craft behind it, especially making the dough. To use five simple ingredients and turn it into something light, crispy, and airy is just magic.”
The kitchen will source from local farms and purveyors alongside imported staples—organic flour, San Marzano-style tomatoes, and aged Parmigiano Reggiano among them.
The 8-seat bar will pour more than 20 Italian wines by the glass, with Senior Sommelier John C. Slatter (Aba, Ema) curating a list focused on artisanal, family-owned producers. Senior Beverage Manager Nicholas Berggren (also Aba, Ema) leads the bar program, which features an all-natural Spritz list, Italian-inspired cocktails, and a solid selection of low- and zero-ABV options.
Pizzeria Gabbo will be located at 834 W. Fulton Market St., Suite 200.
