Spicy refried beans with egg

I usually buy La Morena refried beans but they only had a generic brand in stock and they were so bland so I had to get creative!

  • 1/2 a spanish onion finely diced
  • 1 clove of garlic finely diced
  • 1/2 a teaspoon of smoked paprika
  • 1/3 teaspoon of cayenne pepper
  • Pinch of salt
  • 1/2 can of refried black beans
  • 4 cherry tomatoes diced
  • 1 Jalapeño (2/3 diced, 1/3 sliced for topping
  • 1/3 Cayenne pepper chopped (1/2 for frying and 1/2 for topping)
  • 1 egg
  • Topping: Coriander (cilantro), chilli flakes, Yellobird Jalapeño hot sauce, chilli reserved from earlier, squeeze of lime

Fry the onion and garlic in olive oil, add in the spices. Add the refried beans, chilli and tomatoes with a splash of water to beans (add more as needed).

Make a hole in the beans and crack the egg in. Reduce the heat to low and put the lid on the pan (2-3 minutes).

Plate up with toppings and finish with a squeeze of lime and the hot sauce.

Just a warning, this is very spicy in the best way possible so reduce chilli etc if you want a milder version.

    I will never eat canned beans again after cracking the code for the ultimate dried frijole boil. That egg addition is righteous though.

    I eat my eggs with runny yolk and on the side refried beans with some melted cheese and some green or red salsa and then start eating all of it with some corn tortillas it’s a tasty breakfast 🍳 personally I split my tortilla in 4 and my egg in 4, then I add some refried beans to the tortilla and then the egg and some salsa on top 👩🏻‍🍳 yours is a lot of beans tho that’s gonna be some crazy’s farts 😂 I’d eat half of that with 2-3 eggs and 2-3 corn tortillas
