INGREDIENTS
-1 red bell pepper
-1 red onion
-1 jalepeno pepper
-6-8 cloves garlic
– 1lb ground beef (preferably less lean)
-10 slices of bacon
-green onions
-1 can pinto beans
-1 can kidney beans
-1 can fire roasted tomatoes
-1 can tomato sauce
-3 tbsp tomato paste
-hefty tbsp cocoa powder
-tsp of sugar
-beef bouillon
RECIPE
-dice red pepper, red onion, and jalapeño pepper set aside.
– dice 6 to 8 cloves of garlic. Set aside.
-dice the bacon and set aside
-mix, garlic powder, onion powder, paprika, cayenne pepper, chili powder, and cumin into a small dish set aside
-get out ground beef and place into a bowl mix half of all the seasonings into the ground beef completely
-turn the stove to medium high and cook the bacon in your Dutch oven or pot until crispy take out the bacon and then keep the bacon fat inside of the pot.
Add the ground beef into the bacon fat and cook.
Grind up the beef while cooking once the beef is completely cooked through.
Take the ground beef out and set aside, leaving the leftover fat and oil in the pot.
-add all of the vegetables into the pot over the fat and cook for 3 to 5 minutes. Then add the garlic and cook for another 2 to 3 minutes. Add in tomato paste let tomato paste cook until darkened, usually 2-3 minutes.
-deglaze the pot with one cup of beer. Let the beer reduce and then add one cup of beef broth, kidney beans, pinto beans, and fire roasted tomatoes. Let cook for a few minutes -add in the ground beef, bacon, tomato sauce, cocoa powder, beef, bouillon, extra spices, salt, and pepper, and teaspoon of sugar
-let simmer for 1 to 1.5 hours, to desired thickness.
-serve topped with sour cream, green onions, and shredded cheese
