Smoked Pepper Salt

Hey everyone, I’ve seen people on here asking what to with peppers so here’s a thing I do. Every year I grow peppers I make batches of hot salt and hot sauce. I primarily grow coolapeño, jalapeño, poblano, habanero, and red ghost. I like to use tubular wire mesh baskets or porcelain coated cast iron to hold and smoke peppers by themselves or in combination with kosher or sea salt. I smoke over a regular ‘barrel’ style charcoal grill using mainly apple wood just because I have a cheap local source. If the peppers aren’t dried enough after smoking then I’ll throw them in the dehydrator and run it outside on the porch to not capsaicin bomb my home. I end up gifting or trading most of it year to year but I use the salts to make pickles or various brines and then use the hot salt in fermented hot sauce.
