Two restaurants are closing at Thesis Hotel Miami Coral Gables — but two new upscale spots are on the way.

Nolan Reynolds International, which owns the hotel, has partnered with Sam Nazarian’s sbe to bring the Japanese restaurant and sushi lounge Katsuya to the Thesis, along with a new Mediterranean concept from chef and restaurateur Fabio Trabocchi.

Brent Reynolds, CEO of Nolan Reynolds International, said his team “built Thesis to be more than a hotel.”

“We wanted it to be a gathering place for Coral Gables, and for more than six years this community has made it one,” he said. “This partnership is the next chapter of that vision. Sam understands how to create restaurants and experiences people want to return to, and Fabio has already built a special connection with Coral Gables.”

Trabocchi, whose Italian restaurant Fiola in Washington D.C. has a Michelin star, was the original creator of Fiola Miami, which opened in 2018 in conjunction with the Gioia Hospitality Group. When their agreement ended in 2025, Gioia founder Thomas Angelo turned the space into the second location of his popular steakhouse Daniel’s.

The Trabocchi restaurant at the Thesis won’t be Fiola; it will be something new. It’s expected to open early in 2027 in the former space of The Collab, which will be closing sometime before the end of 2026. The Collab currently occupies the spot that was once chef Niven Patel’s Orno.

Katsuya will open sometime in the first half of 2027, taking over the space of Mamey, which is also closing. sbe’s Nazarian, who lives in Coral Gables, wants the change to transform Thesis into the sort of place locals return to throughout the year.

“My family and I live here, we eat here and we celebrate here, so bringing Katsuya to my own community is personal,” he said. “We have an opportunity to build something that genuinely belongs to Coral Gables.”

Known for its sushi, robata and other Japanese cuisine, Katsuya first opened in 2007 in Hollywood. There are four Katsuya locations in Los Angeles now, another in Toronto and one in Nassau, The Bahamas. The Katsuya locations in Brickell and Miami Beach are now closed.

The restaurant changes won’t affect Ivy Rooftop, the open-air bar and lounge on the third floor, which Nazarian says is an integral part of the new Thesis.

“We want Thesis to become part of people’s lives. Dinner on a Tuesday. Drinks on the rooftop on Friday,” he said. “A business dinner, a graduation, a birthday or wedding weekend. Katsuya, Fabio and Ivy Rooftop each bring something different.”
