BOURBON CHILI

This cook was planned for outdoors, but the high winds and cold rain had other ideals. Regardless, this Beefy Bourbon Chili came out amazing on the stove top! Oh so good!

Ken’s Bourbon Chili
Ingredients
2 pounds ground beef
1 small to medium onion, chopped
1 green pepper, chopped
2 stalks celery, diced
1 10 oz can RO-TEL, Original
1 14 oz can of diced tomatoes
1 14-ounce can kidney beans
2 tablespoons chili powder
1 clove garlic, minced
1 1/4 cup tomato juice
1/4 cup Bourbon
1 15 oz Can tomato Sauce
Salt, Pepper & Garlic to taste (Optional)
Chipotle Chili Pepper to taste (Optional)
Red Pepper Flakes to taste (Optional)

Preparation
In a large pan, brown beef. Pour off fat. Add garlic, onions, pepper, and celery. Sauté lightly. Add remaining ingredients and simmer gently about one hour. Serves 6-8.
