Low fat, high carb, low calorie density. This white bean chili recipe is perfect for maximum weight and of course starch solution compliant. Here is what you will need for this white bean chili recipe:
Ingredients
1/4 cup water
1 red onion chopped
1 red bell pepper chopped
1 head of roasted cauliflower chopped
1 tsp minced garlic
1 tsp each: salt, oregano, parsley garlic powder, onion powder, smoked paprika, chili powder
1/8 tsp red pepper flakes ( optional)
4 cups of veggie broth, water or both
1 small can green chili’s chopped
1/2 cup red lentils
1 cup frozen roasted corn ( or sweet corn)
1 can white beans rinsed and drained
1 can garbanzo beans rinsed and drained
Instructions:
First cut the cauliflower into florets and season with salt, onion powder, garlic powder, smoked paprika and place on a lined baking sheet. Roast for 30 minutes @ 350 degrees. Then remove from over and set aside. when it is cool enough to handle chop into bite size pieces and set aside.
Set Instant pot to saute mode and add water, onion and bell pepper and saute for 5 minutes, the add garlic and cook 1 minute. Turn saute mode off and add all the spices and stir well. Add the rest of the ingredients including cauliflower and stir well. Make sure everything is covered with liquid if not add more water. Set to manual for 10 minutes and you can do either natural or quick release.
