You will need:
Baby corns: 18 to 20
Corn flour: 2 tbsp
Maida: 3 tbsp
Peanut powder: 4 tbsp
Chopped spring onions: 1 tbsp
Chopped garlic: 4 to 5
Chopped green chilies: 3
Garlic-ginger paste: 2 tsp
Black pepper powder: ½ tsp
Red chili powder: ½ tsp
Red chili sauce: 2 tbsp
Soy sauce: 2 tbsp
Hot and sweet tomato sauce: 1 tbsp
Schezwan sauce: 4 tbsp
Green chili sauce: 2 tbsp
Vinegar: 2 tbsp
Sesame seeds: 1 tbsp
Salt (as required)

Preparation:
In a pan, add peanut (1/2 cup) and dry roast
Remove from flame and let the roasted peanut cool
Transfer them to a mixer jar and grind to get coarse powder
Keep aside the peanut powder

In a mixing vessel, add corn flour (2 tbsp), maida / all purpose flour (3 tbsp), schezwan sauce (3 tbsp), red chili sauce (1 tbsp), hot and sweet tomato sauce (1 tbsp), green chili sauce (1 tbsp), soy sauce (1 tbsp), garlic-ginger paste (1/2 tsp), red chili powder (1/2 tsp), black pepper powder (1/2 tsp), vinegar (1 tbsp), salt (as required) and mix well
Add water (as required) to make thick consistent batter
Add baby corns into the batter and coat them properly with batter
Keep aside the remaining batter

Heat oil in a pan for deep fry
Slow slide each coated baby corn into the hot oil and deep fry in medium flame till golden and crispy
[Do not crowd with too many baby corns]
Transfer with ladle and drain excess oil
Repeat the process with rest of the coated baby corns
Keep aside the fried baby corns to cool
Gently insert skewers into the fried baby corns
Keep them aside

In a pan, add oil (3 tbsp) and let it heat
Add chopped garlic (4 to 5) and saute
Add chopped green chilies (3) and daute
Add peanut powder (4 tbsp) and mix well
Add the remaining batter and mix well
Add water (1/4 cup) and mix well
Make sure no lumps are formed
Let all ingredients combine well
Gradually add water (1 cup) and mix well
Add salt (as required) and mix well
Adjust seasonings as required
Add red chili powder (1/2 tsp), schezwan sauce (1 tbsp), red chili sauce (1 tbsp), green chili sauce (1 tbsp) and mix well
Let the mixture thicken to gravy consistency
Add soy sauce (1 tbsp), vinegar (1 tbsp) and mix well
Mixture thickens to gravy consistency
Add chopped spring onions (1 tbsp), sesame seeds (1 tbsp) and mix well
Gently slide the baby corn skewers into the gravy and coat them properly
Cover and cook for 2 minutes
Remove from flame
Plate the Baby corn satay on a serving late
Garnish with remaining gravy, chopped spring onions, sesame seeds
Baby Corn Satay is ready
