Zippy Amba Sauce | Popular Middle-Eastern Sauces

Amba (Arabic: عمبة) is a tangy mango pickle condiment popular in Middle Eastern cuisine (particularly Iraqi)
It is typically made of mangoes, vinegar, salt, mustard, turmeric, chili, and fenugreek, similar to savory mango chutneys.

The name “amba” seems to have been derived from the Sanskrit word “Amra” and the mango is itself a native of India.

Amba is frequently used in Iraqi cuisine, especially as a spicy sauce to be added to fish dishes, falafel, kubbeh, kebabs, and eggs.

Similarly, Assyrians typically use amba along with falafel, too.

Recipe :
1 Mango
1 tablespoon Turmeric
1 tablespoon Paprika
½ tablespoon Fenugreek
½ tablespoon Mustard (Normal or powder)
½ a CupApple vinegar
Salt
adjust sweetness with sugar

to Elevate it more you can add :
1 ½ teaspoon ground coriander seed
1 tablespoon Sumac
½ head garlic
2 tablespoons cumin seed
