15 Minutes Vegan One Pot Quinoa Chili #vegan #shorts #recipes
Ingredients:
– 2 red onions
– 1 jar / 220g chickpeas
– 1 jar / 220g corn
– 1 jar / 250g kidney beans
– 150g quinoa
– 700g tomato passata
– 250ml veggie broth
Optional toppings:
– soy yogurt
– avocado
– lime
Instructions:
1ļøā£ sautĆ© onions in a bit of water or olive oil until browned.
2ļøā£ add washed quinoa, drained corn, kidney beans, chickpeas as well as the tomato passata and veggie broth.
3ļøā£ season with spices of choice. I like to use paprika powder, pepper, salt, chili powder and chili flakes.
4ļøā£ close pot with a lid and let it simmer for about 10 minutes. Make sure the heat isnāt turned too high otherwise it might burn.
5ļøā£ remove lid and cook on medium/high for another 5 minutes until desired consistency (make sure to stir from time to time)
6ļøā£ serve with some soy yogurt, avocado, chili flakes and lime wedges š
