Egg in Chili Sauce aka Telur Balado

The purpose of frying eggs is to have the sauce stick better on the surface.
When frying a whole egg, make sure you do the steps below to reduce the chance of egg exploding and injury:
– Heat up the oil to medium high heat. I usually heat it up to high and turn it down to medium before I start frying the eggs.
– Make sure the surface of the egg is dry.
– Drop the egg gently so the hot oil doesn’t splatter everywhere.
– Keep rolling the egg back and forth to make sure the surface is equally fried (It only takes a few seconds).
– Don’t let the egg sit in the hot oil too long, or it will explode and create a big mess or create injury to yourself.
– Once the surface is equally fried, scoop it out right away. It only takes a few seconds for each egg.
