All about the Sauce, 11 of 50. Garlic Chilli Sauce – this is a banging condiment sauce. Recipe below
15 garlic cloves peeled
10g fresh ginger peeled and diced
1 chilli sliced
3 tbsp chilli powder
2 tbsp caster sugar
1 tbsp ground cumin
2 tbsp tomato purƩe
1 tbsp cider vinegar
Squeeze of lemon juice
300-350ml water
1 tbsp glucose syrup or honey
1 tsp salt
Splash of oil
1. Lightly toast the garlic, ginger and chilli in a splash of oil. Add the salt and then the chilli powder and cumin stir for 30 seconds
2. Add the tomato purƩe and cook out for 1 minute before adding the water and sugar. Stir well and simmer over a low heat until the garlic is tender.
3. Add the vinegar, lemon and glucose/honey. Cook out for 10 mins then cool
4. Add to a blender and blitz until smooth
