    All the cuts of meat I use to buy cheap are now gourmet products.

    This is exactly what my grandfather would complain about. Fajitas, lengua, ox tail, etc were all things the butchers would throw away or sell them for dirt cheap. Now I can’t afford to eat the foods that I grew up with

    Remember when chicken wings were pennies and then buffalo went to the superbowl 4 years in a row, driving the popularity of wings up exponentially? Meanwhile leg quarters off the same chickens are 47 cents per pound.

    Probably from American Wagyu. My old job used to get Japanese Wagyu lengua that was basically 60$ a piece. We used American Wagyu for training.

    Damn! I’m not trying to start no business here, but it would be cheaper for you if you just asked for someone here in Mexico to send you one. Here, tongue can be found starting from $300MX ($16USD).

    It has something to do with Black Angus cow tongues(which are black or partially black). When more Black Angus cows from the US,Argentina and Mexico enter the market some Asian counties try to purchase all the white tongues off the market,thus driving the retail cost up. For some superstitious reason they don’t like black tongue.Its silly because ,1.They consume the rest of the cow anyway and 2.The outer skin if the tongue is usually peeled away after cooking.(Ask your Meat Market about ordering Frozen black tongues in bulk. They usually are about 8-10 tongues per case from Monfort, Excel or IBP packers.

    Hipster foodies and the Food Network. Same reason why my local birria spot that initially gave you 3 quesabirrias with consome for $7.99 now charges $12.99 for 2.

    I am fortunate there are a few carnicerias near me and a couple Asian markets as well, I’m still able to get a pretty good deal on the “off cuts”

Beef tongue is not this expensive because of “hipsters” and the “food network.” Those might contribute to the price, but especially in the US the pipeline from farm to store is extremely streamlined. Cuts which are, to the majority of the market considered exotic or unknown, are diverted to make things like dog food or beef hot dogs. Taking a product out of this funnel and taking to man power to package it and the space to ship it drives up the cost astronomically.

    If you know a local butcher they will sell beef tongue for far less.

  14. We buy half a beef every year and always request the tongue. This year I decided to smoke it and it turned out amazing. Went to the store a few weeks later, saw some in the meat department and threw it in the cart without hesitation. Then I looked at the price and put it back. I’m not paying $40/$50 USD for tongue.

    I’ve been meaning to talk to the butchers around my area, it’s a small town of white people so absolutely no one eats or buys tongue. I talked to a girl who worked at one, said they’ll probably just give them to me.
