Have you watched the taco chronicles documentary on Netflix? That’s a good way to start. I’ve been to a couple of restaurants shown in there and I can tell you they’re pretty good.
You will definitely not find the best tacos in any hotel.

Everyone is going to say than there taqueria is the best, finding the best tacos ever is about what you like, I hate fish tacos and carne asada tacos are whatever to me, but I love suadero and carnitas.

As a born and raised Mexican and professional taquero I’d like to add that you’d be hard pressed to find better al pastor pork tacos than El Vilsito (no association). For stews you want to go Oaxaca and the bajío region. For carnitas it’s no doubt Michoacán. For seafoods probably Sinaloa and the Baja Californias.
If anyone else says otherwise or even another country, doubt it a lot and maybe tell them to fuck off in Spanish (yes I have tried them in Texas, California, etc.).
