Elote with Hot Cheetos! This stuff is so good, it’s one of my guilty pleasures.

    Ingredients

    20 oz super sweet frozen corn
    3 tbs salted butter
    3 tbs mayonnaise about 1 tbs per cup
    1/2 cup chopped cilantro
    2 limes cut into wedges
    1/2 tsp Tajin to taste
    1/3 cup grated parmesan
    1 1/2 cup crushed hot cheetos

    Instructions
    Cook the corn as directed on the back of the bag. Cook one bag at a time.
    Pour the bags of cooked corn into a bowl and add the butter. Stir until the butter has melted.
    Add 3/4 cup of corn to a cup. Add 1 tbs of mayonnaise to the corn and stir.
    Add some of the chopped cilantro, a squeeze of lime and couple shakes of Tajin. Stir well.
    Next top with the grated parmesan and crushed hot cheetos.
    Prepare the rest of the cups and enjoy.

    sweet corn is not good for mexican style corn

    Thats esquites, not elote. Elote is on the cob. Esquites is in a cup.

    The cup version never appealed to me, but I’ll definitely try that the next time I grill some cobs.

    We have a spot down the street (in New Orleans) that serves Takis elotes! But actual on the cob elotes – it is realllllly good.
