Soy de Torreón. El lugar de dónde es oriunda la discada.
La discada es un platillo que se prepara precisamente en un disco como se muestra en el vídeo. Y consiste en la mezcla de diferentes carnes (carne de cerdo, carne de res, chorizo, tocino, carnes frias, chipotle y que tú chile tomate y cebolla).
Existen muchas variaciones en la preparación. Habrá quien le ponga puré de tomate, Clamato, cerveza, inclusive hay quienes le agregan piña, ya cada quien le da su sazón.

I’ve only made it once using my neighbor’s disco, but it was so good. I had to cut this recipe in half because the disco was much smaller:
