Piedras / Tuniches / Piedra en Maya


20 years ago ago I ate these delicious appetizers while living in Merida, Yucatan. Crispy, fried, spicy tamale balls filled cochinita pibil (almost like a version of an arancini).

I’ve never seen them anywhere else in the world and I’ve spent years trying to figure out what they were called.

With the help of a chef from Yucatan, I’ve finally found out they go by the name “piedras” or “tuniches” or “piedra en maya.”

  1. There is also a similar crispy ball in maya cuisine, called polcanes and filled with white beans/ibes

    Yucateco here. Never had piedras filled with anything but beans. Those are supposed to be ultra cheap and are very popular as a midday snack among students and people on the street.
