This is interesting… I have never seen Chilaquiles that look so dry before. Also is that celery? Certainly different from what I am accustomed to.

Chilaquiles were invented long ago to use up ingredients left over from previous meals, dry stale tortillas, left over sauce (red, green, other…) and any other random ingredients (chicken, onions etc.). Dried out tortillas are fried then sauce is added to moisten and topped off with cheese. Depending on how much sauce you had your chilaquiles would either be drier or wetter. Different regions also have favorite variations and methods of preparation. I have even made them with beans as a sauce (my version of enfrijolada chilaquiles) topped with fresh tomatoes, diced onions and queso fresco.
Nowadays people buy fresher ingredients to make chilaquiles with so moisture content is definitely a preference but there is no wrong or right way to prepare and enjoy them. Call it the Mexican version of ochazuke.

Por supuesto que se ven buenos, ademas se ve algo de huevo revuelto y un pedacito de apio, probablemente parte del guisado de la carne?
Que rico, mañana voy a desayunar chilaquiles, a mi si me gustan con mas salsa y mas crema. Pero nunca he despreciado unos chilaquiles.
