If we’re focusing on the Mexican/Gulf Coast region… for me that would be: black label Valentina (the Extra Hot one) and/or black label Tabasco Scorpion. They go with pretty much *everything*. They’re the Victorinox Multi-Tools of heat IMHO. The original Louisiana Hot Sauce (the literal brand name with the blue text + yellow and red bordered label) would be a close second to the above mentioned two. I’d place it a smidge above Crystal, myself.
