✦INGREDIENTS:
• 1/4 onion (diced)
• 2-4 bell peppers (cut)
• 1.5 – 2 lbs ground beef
• salt/pepper to taste
• 1 tsp cumin
• 1 tsp oregano
• 1 tsp red chili powder
• 1/4 tsp crushed pepper
• 2 tsp minced garlic
• 1/2 – 1 cup beef stock
• 1/4 cup chopped cilantro
• 2 cups Mexican cheese blend
** serve over Jasmin rice

I just finished eating my version of this, well my mom's version. Lol.
She called it "stove top stuffed peppers", so I still do.
Mine is more simple though.
I buy peppers in bulk and chop them up and freeze them, and freeze the ground beef too.
It's quick and easy to thaw and cook the beef and throw in the chopped peppers. Then I add some seasoning and just add a jar of spaghetti sauce and chopped onion.
Then I make the minute rice to go with it. It's just so quick. Lol
