
So I made Birria and Consome this weekend and while the meat turned out super tender it didn’t really have any flavor to it and the broth didn’t really have any either. I’d bet you’re just lacking salt, so I would add chicken bouillon (or salt) until you like how it tastes.
Salt works wonders.

Why would you make birria and consomé separately?

If you followed that recipe (using all the correct chilies and spices), I can’t think of any way it would taste bland. Did you substitute different chiles and/or spices?
