I live in the cincinnati area. I usually buy the seasoning packets at kroger but it's still not completely the same. I tried this and it's DEAD ON!!!!!!! thank you!!!!!

To the best of my knowledge no chili parlor in Cincinnati uses chocolate in their chili. That's a myth perpetuated my tourists and non locals. The owner of empress and the founders of skyline have all gone on record stating that there is no chocolate in their recipes. However with over 125 independent chili restaurants (not counting gold star, dixie, skyline and empress) I can't rule out the fact that one of them may be using coco. Besides if there was chocolate in the recipe then the cincy chili packets and canned chili would have to list it for allergen reasons and non of them do so no chocolate. I know that minced garlic (or garlic powder) is in there. Good call on that chocolate decision.
You are correct, chocolate doesn't belong in the original recipe. It comes from a Mediterranean dish made with Lamb and noodles, which is why we don't brown the beef but instead put it in the pot.What Americans did was add the chili spice among other things. My question for you is I was wondering where you got your recipe? I'm tryin to find something close to the original American version and yours is close. Thanks for the post.
Over in Cleveland we only have a few Skyline Chili shops. Eventually I'll take a trip over to Cincinnati to try out the other restaurants. In the meantime I'll have to give your recipe a try.
I know this is a 5 year old video, but Gebhardtās Chili Powder was 1st to make and market Chili š¶ spices and canned chili and many other great Mexican foods and are still in business in San Antonio, Texas!!!
You seem to be the real deal, and are better than those cookin shows. You're right, don't need chocolate. Not that its' bad, just alters taste too much IMO.
everytime i go to cook any recipe on video the person puts 37 types of spices or whatever i dont have all those spices!! i got my cinci chili in a can just show me how to throw it together lol
Loved watching this video. You are awesome and I am so glad I found your channel. My ex, Michael Morris, is a Cincinnati boy who taught me to love this dish. It continues to be one of my all-time favorite things to eat.
I grew up in Cincinnati and have lived here my whole life. I've made chili my whole life and had many other people's take on Cincinnati chili and you made it very close in taste however you made it so much more complicated than it has ever needed to be and the whole point of a four way is to add onion to the chili the moment you cook it with onion especially the amount you used you no longer have chili you have meaty onion soup. And I have never seen it take any more than an hour to cook if it has to cook that long you put away to much water in it.

Iām finally making this tonight I never had this kind of chilli as I am in Canada and so that kind of chilli is not known

Doesn't Goldstar use cocoa powder and Skyline use cinnamon?
In Cincinnati they say it's skyline time or ghosts are time or Cincinnati time I know I live here been here all my life

I always put cocoa or chocolate in it but I always have it on hand. According to Wikipedia chocolate is authentic.

For quick reference:
2 tbsp olive oil
2 lbs ground beef
1 cup water
2 cups beef stock
cook 30 minutes
3 tbsp chili powder
1/2 tsp cayenne pepper
1/4 tsp ground cloves
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp or 5 berries Allspice
1/2 tsp cumin
2-3 bay leaves
1 tsp salt
1/2 tsp ground black pepper
1 tsp sugar
2 tsp worcestershire sauce
16oz can tomato sauce
1 tbsp apple cider vinegar
2 medium onions, diced
2-5 cloves garlic, diced
