    The only nearby panaderia we go to has reduced the number of these that they make, and even their conchas are not being as freshly made as often anymore. As a result I’m considering if we try making pan dulce like this at home. Was it difficult?

    I have never seen them here in CDMX panaderías, or at least not noticed their existence. LOL

    But elotes for me, is white corn with mayo, grated cheese and chilli powder.

    Recipe:

    -Dough-

    4 cups flour
    11 grams of yeast
    1/2 cup sugar
    2 tbs cinnamon
    1 egg+1 egg yolk
    1 cup lard (217g)
    Pinch of salt
    1/2 cup water

    -Filling-
    3/4 flour
    1 cup powdered sugar
    1 egg yolk
    1/3 cup softened butter

    Bake at 350 for 20-23 minutes
