This was amazing. Smoked Barbacoa Taco. Fresh salsa, onion, queso fresco, cilantro.

   I’m Mexican and have never ever seen a barbacoa taco with cheese before. It feels so unnecessary but to each her own. There’s an obsession with cheese in this country, though.
