Any idea how this steak was cooked or what the style it is?


It was the most tender steak I have ever had and I can’t stop thinking about it. Los Cabos Pedregal

    My guess: Looks like it was cooked in a griddle at very high temp and just a spoon of cooking oil. Is it a flank steak?

    Looks like marinated “arrachera”, extremely juicy, usually bulky without clean single cuts. If that is the case, most of the flavor comes from the marinated.

    Can be cooked on the plank or the grill, less than 6 minutes on each side. Extremely easy to cook and popular meat in Mexico.

    looks like it could be arrachera which can either be inside skirt or flap steak but the color seems a bit strange. I would expect that color from cecina which is a type of salted thin cut meat that is left to cure a bit. It seems to thick to be cecina, though.

    Definitely arrachera, which was my favorite when I visited Mexico City.

    What are those enchiladas on the side with the green sauce, along with, I think, a chile poblano?

    This is bottom sirloin aka flap/arrachara/bavette. It’s probably been marinated and cooked on a comal as there are no grill marks.

    Looks like arrachera – Costco sells it as Skirt steak! It’s the same steak used for ropa vieja.

    Marinade : beer, lime, onions & salt then grill. Or just salt, onions, lime and grill.

    Mexican here.

    -Enchiladas suizas, chicken filled rolled tacos with a tasty green sauce.
    -Chile relleno, stuffed poblano pepper filled with either ground meat, a combination of cheese or something else. Covered with egg and a red sauce.
    -Arrachera, inside skirt on a pan

    The dish is called tampiqueΓ±a and the meat is marinated flank steak.

    Not sure if arrachera is the same thing but this looks very similar to the tasajo (aged beef) I had in Oaxaca.

  23. Its arrechera, which is flank steak. Its marinaded in lime and a few other things that gives it the flavor and increases the tenderness.
