This Italian sausage and peppers is an easy sausage and peppers recipe for a busy weeknight! Gluten free and keto friendly!
INGREDIENTS
• 3 medium bell peppers (green, yellow & red), sliced into ½ inch strips
• 1 medium onion, thinly sliced
• 5-8 garlic cloves, minced
• 2 pounds Italian sausage links
• 1 tbsp oil • salt & black pepper to taste
• 1/2 tsp dried oregano
• 1 tbsp chicken bouillon paste
• 1/4 cup dry white wine • 2 tsp white wine vinegar
• 4-5 canned San Marzano tomatoes, broken up into chunks by hand
• ½ cup fresh basil, thinly sliced
DIRECTIONS
1. Heat a thick bottomed pan or cast-iron skillet over medium high to high heat. Add oil and brown sausages on all sides. These do not need to be cooked all the way through. Remove from pan.
2. Add sliced onions and cook for 1-2 minutes or until they brown a little and soften. Add sliced peppers and mix. Season with salt & pepper
3. Add minced garlic, mix and cook for 1-2 minutes or until garlic becomes fragrant. Add white wine and vinegar, let evaporate a little and reduce heat to medium.
4. Add dried oregano and chicken bouillon paste. Mix until bouillon paste is evenly distributed in the pan. Add tomatoes and gently mix.
5. Bring to a low boil over medium heat. Once boiling, reduce heat to low and cover for 15-20 min. Test a pepper and if needs more time, add 5-10 min. After fully cooked, let simmer uncovered for a few minutes to reduce liquid if needed.
6. Remove from heat and garnish with fresh basil. Enjoy!
