Ideas for leftover cochinita pibil sauce?


Made cochinita pibil this evening for the first time in the pressure cooker and was left with quite a bit of liquid at the end. I reduced it down and it’s now pretty potent. Aside from mixing it through the shredded pork, what else can I do with it?

    Put it in ice cube tray. Freeze. Pop the cubes into a freezer bag. Use in future dishes.

    Why do you have leftover sauce? It’s supposed to cook with the sauce.

    uuuuuuuuummmmm Cochinita is wet not dry…why are you separating the wet from the meat? Cochinita pibil is one of the favorite things to order when I get Gorditas con queso, it’s messy and delish…Only time I have had ‘ Dry ‘ Cochinita is when mi suegra made it into tamales…

    This is cochinita but not pibil, pibil means cooked under ground. It’s a particular Maya technique.

    Lol the cochinita is all about that sauce, it’s not supposed to be dry.

    when I find my self with extra liquid I do this!: 1. See if it could be used to braise something else. 2. If not use it to make some incredibly tasty rice!
