Pepper and Egg Sandwich | The Chicago Style Egg Sandwich Recipe



This is how you make the ultimate Chicago Style Pepper and Egg Sandwich. Soft scrambled eggs, stewed sweet peppers and Turano French bread ( the same bread used for Italian beefs in Chicago) give this pepper and egg recipe the true Chicago flavor.
The secret to this Lent recipe is stewing peppers the day before. It makes the flavor so much better by allowing all of the spices to infuse into the peppers. This is the best sandwich in the world during lent! I use green bell peppers, the same peppers for Italian beef sandwiches.

** Sweet Peppers Recipe **
1 green bell pepper
1/4 cup extra virgin olive oil
1 tsp kosher salt
1/2 tsp black pepper
1 tsp dry oregano
1 tsp granulated garlic

1. Preheat a saute pan over medium heat
2. Add the peppers and cook until they lightly soften
3. Add the seasoning and stir well to incorporate
5. Cook for an additional 5 minutes, stirring occasionally until the peppers are soft but al dente
6. Cool the peppers and store overnight until ready to use

  2. Being an Italian from Brooklyn growing up on this very nice job Michael. Many use red peppers but I agree green superior for this. Excellent job. Amazed many dont serve this sandwich as can eat for breakfast, lunch or dinner and also can add potatoes to give it that extra kick.

  6. OMG!!! I am salivating! I have not been able to find a good P & E sandwich since I moved from Chicago. I live currently in Scottsdale, and with all the Chicagoans out here, I am shocked there is not a good P & E!! Would you add cheese, parmesan?

  10. Bud, where did you get the Chicago from. My grandmother came to America in 1913 , landed in NY and they were eating it back then. So originated in Italy, brought to NY where you can get it in any deli or pizzeria ANYTIME of the year. Chicago tried to steal pizza and now peppers and eggs.
