Arrachera or diesmillo ?
You answered your own question. Butterflied skirt steak. Must have been a thick cut
My meat market uses brisket and slices it like this then seasons it.
Cheaper and more tender than skirt steak.
Looks like an opened out pork tenderloin to me.
No sure about the cut, let’s eat
Flap steak. Fajita. Ranchero.
It looks like hanging tender. We often see these called Fajitas Nortenas in South Texas meat markets.
That looks like canada
Shirt steak
Def a hanger steak but it looks there may have been multiple incisions to butterfly it? Maybe to make it even thinner.
Looks like skirt steak with chilies roasting, looks mexican to me
Arrechera aka flap meat.

Butterflied flap steak
Americans 😜🤣😝
“Rib flap” or as others have said “Flap steak” in California.
It’s diezmillo = loin… straightup carne asada..
Pierna de puerco
I’m sure this is carne enchilada, which is usually made of pork. Probably a part of the leg.
Yes, preferred for “Carne asada” nights
Carne asada
Arrachera
Fajitas marinadas from La Michoacana $13.99 lb
That is called cecina and it’s basically a spiced pork steak
It looks like carne enchilada
Definitely skirt.
Flap
“Arrachera” in Mexico
It looks like a butterflied chicken breast
It’s long pig.
Flap steak is actually rib eye but butterflied
