Habenero ferment


So I’ve started this habenero ferment as my base. I will be adding fresh fruit later. How long does everyone like to let these go for?

    Anywhere from 2 to 5 weeks mostly jn 3%. I dont open it midway. I do have a jar of mash thats been unopened since last November tho that im trying to figure out what to do with.
