Keep my plants through winter?

This is the first year I attempted pepper plants. I have a large Jalapeno plant which only produced a few peppers. My habenero plant produced 10 or so nice peppers. The third and largest plant is a Dragon’s Breath which only produced 1 pepper.
They are currently in my herb garden and I am planning on potting them by themselves if I keep them through winter. I am in Central Florida and will have warm temps outside of a few nights all year. Should I just keep them going all year? Should yield improve with age?

I would keep them though the winter, just watch for pests like aphids if they’re indoors with no natural predatory insects.
