**I.** Red salsa is better than green salsa but it’s rare to find a taquería that does it well so green salsa becomes the MVP in most places (red salsa has more interesting flavors but green salsa is a reliable option that goes well with most things, even a mediocre green salsa tastes good whereas a mediocre red one doesn’t, it just burns your tongue).

People who flood their food with salsa to prove they’re very macho or Mexican are dumb, they just nullify the crazy nice range of flavors that makes the Mexican cuisine as great as it is.

The comment came from my Danish friends who visited Mexico for the first time: “it’s literally all the same ingredients in different presentations” (referring to tacos, quesadillas, gorditas, sopes, huaraches, enchiladas, tamales, etc). BUT something primal awakes in me when having white people nachos or steak fajitas (probably because I’m addicted to sour cream). It’s good. It’s not authentic, but it’s really good.

Mexican food isn’t really that spicy. Yeah if you put some spicy salsa on your food, it can be, but honestly I feel like Asian cultures have spicier food in a general sense compared to Mexican food. Also this isn’t a complaint, Mexican food is my favorite cuisine, I just think this stereotype that Mexicans love spicy stuff is not really true.

EDIT: I should clarify, I am referring to raw and simply roasted jalapeño here. Dried chipotles, chipotle powder, or chipotles in adobo—those are delightfully transformed and taste nothing like the original state. I’ll allow it.
