This tomatoes, eggplant and bell pepper salad is very tasty and easy to make. It will be great as a side dish for any meat or fish dish or as a simple vegetarian or vegan main dish.
Ingredients:
1 eggplant
2-3 tomatoes
1 red bell pepper
1 onion
Vegetable oil
Parsley

I love eggplant. I use it as meat in my vegetable spaghetti.
Please do some salad dressings without egg, wine vinegar. Some with the only oil being olive oil.
