Why air dry? Lots of bacteria, mold to deal with. It you at least cut them open, you will reduce that quite a bit. What are your plans for use?

Never heard of air drying thick walled peppers. Only thin walled like cayenne.
You really should try a dehydrator or your oven.

I’ve air dried jalapeños that’s the thickest I’ve done but they pretty much stay bright red the whole time

Looks like too much moisture causing some rot. I would at least cut these and dry them a bit to start in a dehydrator or oven before hanging next time.

Dehydrators are cheap. Better than throwing away a bunch of moldy rotten peppers.

Def too much moisture. You either need a dehydrator, or a room with lower humidity levels, that also has airflow
