
Pulled out the remaining chili peppers from my garden shown in this photo. Anyone got any ideas what I can do with the green ghost peppers? I’ve already made the salsa I intend to make for the season. I’ve heard green / unripe chilis aren’t the best in ferments. Just looking for ideas.

I turn mine into sauce, or eat them.
Malettas makes a hot sauce with green ghosts, haven’t tried it but it looks really good. You could try something similar https://www.malettashotsauce.com/shop/p/greenghost

Salsa Verde with tomatillos.
Every year at the end of season, I pick all of the remaining peppers before the first frost. I take all of the unripe ghosts, habaneros, etc. and put them all together to make both Mean Green hot sauce and dehydrated powder. It, of course, does not have the full kick of the peppers, but it’s still spicy and a lot of my friends prefer it. Works great and no wasted peps!
