Mexican Style Omlete


Mexican food is expensive from where I am from so made some at home haha.

    You can make huevos a la mexicana, use diced onion, tomato and green chillies, along with some ham or bacon. Serve them with corn tortillas and refried beans, they are wonderful and have been my staple breakfast for a long time.

    Lazy Mexican breakfast: migas.

    Break/cut three cold corn tortillas into… 10 to 12 pieces each tortilla, pieces should resemble “chips” but don’t stress on the form.

    Saute onion until transparent, add cold tortilla chips, mix well. We just want them to be warm but still soft, we don’t want actual chips. 1 minute, top.

    Crack and add three eggs, slightly mix everything, salt, pepper, wait until it cooks on one side, flip it.

    Serve in a plate. Heat some red sauce, top on eggs.

    Hangover? Drink beer. Lazy Sunday? Drink coffee. Student? Drink coke. Kid? Drink agua fresca.

    Enjoy.

    Mexican omelets are still omelets… this is just scrambled eggs.

    A popular add-in for scrambled eggs in MX is diced nopal cactus, which you can buy on Amazon surprisingly. Strongly recommended!

  8. Mmm an Omelette it’s an omelette no matter what you choose to put inside. If by omelette you are referring to the fact that you used eggs then you could call this a Pizza since you used wheat flour for the wheat flour tortillas.

    Huevos revueltos/ estrellados con frijoles refritos y un chile en vinagre o chile chipotle y un bolillo/tortillas. Now thats a more realistic Mexican breakfast
