Help with fermenting peppers


Hey everyone, I’ve been fermenting these jalapeños and cayennes for a couple of weeks now and I’m wondering if this precipitation is normal. I’ve got them in a 4% salt solution, using the Ball fermentation lids.

  1. If I don’t do a mash, I like to make sure I cut the peppers lengthwise in half. It looks like the way you cut them they may not have gotten the brine into all of the air pockets and over time this created more headspace in your jars.

    They look fine to me. Need more details on what you mean by precipitation. It does look like you got a touch of kahm yeast particles in there but not a big deal. Definitely don’t put sugar in it you’ll just feed that kahm yeast and make a big mess that will make it taste like off bread… unless your finishing it for sauce then do whatever you want.

    I’ve never once had mold but also no k yeast. I am meticulous with cleaning and sanitize with star San.
