Itās not called pancetta because you cetta it in a panā¦ it needs to meet certain criteria before you can call it pancetta
I don't know if this is supposed to be pancetta or porchetta, but whatever tf it is, you did it wrong. It's so dry and hard that it actually looks like chicharrones gone horribly wrong.

You were doing pretty well, then you destroyed the progress by globbing mayonnaise and "milk cream" into your roasted garlic! I guess 2024 is just gonna be a continuation of 2023. š BTW why is it pork pancetta???
