Hi chef, I've been watching your videos now for a long time and I've wanted so much to try one of your recipes but I'm a non-alcoholic now (i don't like to have alcohol anywhere near available to me) so I was wondering is there a substitute for rice wine? I also sometimes see shaoxing wine in your recipes and I can't find a substitute for that. There are debates whether alcohol truly evaporates when cooked so I want to stay on the safe side.

  9. I cook the onions with the meat. Pre steam all my veggies. Put in cold water. Start throwing all my sauce and seasonings in. And then toss my veggies in. I like my veggies soft
