Help! What is this?


Hello,

I came across this video and I can seem to understand what the sauce is on the top the tacos?

Looks to me like a mayo or sour cream. I’m not to sure and if anyone knows what it is please share with me so I can make some at home.

    Quesabirilla, with garnishment. The sauce may be some crema Chipotle, Or a habanero crema or dried Chilli crema

    Sour cream with a mix of chiles, specific recipes varies from one birria restaurant to another.

    A mistake.

    They look like bad birria tacos. Mayo has no place on tacos anyway unless you’re dressing up fish. There’s really no need to add any creamy sauce to birria tacos – they’re already very wet and fatty and full of flavor if done right. Most commonly, you’ll just add some of the consume the birria came from – either by pouring (MX) or dipping (USA). Also, their ‘birria’ doesn’t look right. My guess is that it’s just slow cooked meat with a little spice added, which is what a lot of shitty places do so they can hop on the trend.

    Judging by what they made, it’s a safe assumption that whoever made it has never had one that wasn’t made from a recipe they found on instagram. Good birria tacos are better than this.
