hey friends welcome to spice India
online this is mulai mahadevan and in
this video I’ll be sharing a tempting
spicy paneer fry recipe it goes by the
name pepper paneer as it’s made with
loads of black pepper powder and few
other simple ingredients it’s quite easy
to make and hardly takes about 10
minutes to whip up the whole dish can be
served as an appetizer or a starter with
some soup or salad or it also works well
as a stuffing for a lunch roll or wrap
or even as a stuffing for a sandwich now
let’s get into the recipe
here are the ingredients that you will
need for this recipe the main ingredient
here is paneer and I’ve taken about 100
grams of paneer which I’ve cut into
cubes and I’m soaking them in warm water
there are a few ways of using paneer in
this stir-fry you can either shallow fry
them in oil which kind of makes them a
little hard after some time so I would
prefer them soaked in little warm water
which will keep them more moist and
juicy during the cooking process you may
choose any one of the method for this
recipe if you plan on frying then make a
light batter with cornstarch salt and
pepper coat the paneer and then shallow
fry them in oil for two to three minutes
or until they turn nice and golden
then we’ll need some oil to saute
everything about half a cup of onion and
green bell peppers I have quartered the
onions in the shape of petals same with
the green capsicum they should be about
the same quantity then adding about 4
small green chilies which are slit open
about tablespoon of minced garlic and
Ginger
and they should be about the same
quantity as well finally for garnish
we’ll have some coriander and Curry
leaves the main ingredient here is black
pepper powder I’m going to use about 2
teaspoon full of black pepper it’s more
of a preference depending on how spicy
you want you can cut down on the pepper
powder finally a little salt
take a white stir-fry pan and heat some
oil in it maintaining the heat at medium
high
once it turns nice and hot start adding
the minced garlic followed by the minced
ginger
depending on the spice level you can
either cut down on the green chillies or
add a few more to make it more spicy I’m
adding about 4 small slit green chillies
which should be good enough for this
measure
saute these for few minutes and then add
the onion petals
you may cut the onions in whichever way
you prefer chopping them like a shape of
petals will give an appetizing look for
the dish now add in the green bell
pepper and saute along
maintain medium high flame and cook
these for about 2 minutes or until the
onion slightly turns a little golden
over the edges
you may want to make sure not to
overcook the veggies 2 minutes over High
flame should be good enough to partially
cook them retaining their color as well
as keeping them crunchy
once you see the ginger and garlic
turning a little golden brown in color
that’s when you going to add the paneer
cubes
drain all the water from the paneer and
add the cubes to the onion and peppers
again stir fry the paneer cubes in the
hot oil along with the veggies for a
minute or so
while that is cooking
add to Salt that’s required for the dish
after a quick stir fry start adding the
black pepper powder
as I mentioned before while adding the
black pepper powder try to add little by
little adjusting the spice level
now mix this to combine and saute to
coat the paneer all over with the black
pepper powder
it’s more of a personal preference so
adjust the heat level according to your
taste I am adding about 2 teaspoons of
black pepper powder here if you think
that is not sufficient enough or it’s
not spicy enough for you then feel free
to add more and also at this stage you
may add few Curry leaves and chopped
coriander leaves and stir fry over High
flame for a minute or so and then turn
off the heat as soon as you add the
black pepper powder you will notice that
it will absorb all the water from the
dish turning into kind of a dry Curry
and that’s it friends tasty paneer
pepper fry is ready garnish it with some
more coriander leaves just before
serving this paneer pepper fry is good
as a starter or an appetizer which you
can serve with some soup or salad
or you may make it as a role or a wrap
stuffing them in chapati or roti
to make a paneer roll or wrap just heat
a tawa and place uncooked chapati or
Roti over it
cook about 2 minutes on each side
applying some oil or ghee to it you may
pretty much use a cooked Roti or flour
tortilla for this paneer wrap or you you
can also get these uncooked tortillas
from the supermarket Indian stores sells
them as uncooked chapati or whole wheat
chapatis either cook or warm up the
rotis and then apply some mayo to it
Mayo suits well for this wrap or you may
use mint Chutney which also goes well
now stuff it with the paneer and then
top it with some fresh coriander leaves
and there you go you have a tasty paneer
roll or wrap ready for your lunchbox
