Shuug – A different spin on a green sauce


I saw someone post about this a few weeks ago and I’m always on the lookout for a great fresh tasting green sauce.

It’s a style I’m extremely picky about as many contain cilantro, a flavor I absolutely love fresh, but that I dislike when it tastes muddy or oxidized.

This isn’t your typical Mexican style green sauce, it’s a style known as Zhoug, Schug, and other various spellings that originated in Yemen and has become popular throughout the Levant, often used on falafel and shawarma.

I’m happy to say this absolutely passes my ‘fresh test’. There’s a great fresh cilantro taste followed up with fresh green peppers like Poblano, Scotch Bonnet, and Jalapeño which gives it that bright herbaceous punch.

The heat level is low, there’s a little bit there, but it’s much more about the freshness and bright flavors than the burn.

It’s something I can heartily recommend trying though, it’s super tasty and even though it’s a Mediterranean sauce I’ve found it pairs equally well with Cuban and American food as it does with Greek and Middle Eastern.
