Sunday Memorial Day Weekend. We did some chili lime corn. Stubbs BBQ Sauce with Pineapple Turkey Tenderloin. Boneless chicken thighs with Kennys World Famous Chicken Seasoning and Steak. Had a nice relaxing chillin time. I was disappointed in the corn but will do some changing with the recipe because I think it would be really good. See below for the Recipes.
BBQ PINEAPPLE TURKEY TENDERLOIN
2 Turkey Tenderloins
Salt and Pepper (to your taste)
Stubbs Orginal BBQ sauce (or what ever you like)
20 Ounce Can Chunk Pinapple
Aluminum Pan
Coat Tenderloins with salt and pepper and smoke with cherrywood on indirect heat till internal temp is 165-175. Remove from grill and place in aluminum pan and cover with BBQ Sauce and then pour entire can of Pineapple with juice. Place back on grill on direct heat and cook for 10-15 minutes. Remove, slice and serve with pineapple chunks and sauce.
CHILI LIME CORN
1 lime juiced
1 teaspoon lime zest, fresh
1 teaspoon chili powder
1 teaspoon liquid smoke (optional)
2 tablespoons butter
Melt butter in microwave or on grill and mix all ingredients. Brush on corn and wrap in foil. Cook on grill for an hour on indirect heat.
