I work at a greenhouse and had to start tossing some of our peppers. These are Pantera and Red Embers, I heard that you can harvest hot peppers anytime and they can still be eaten, but I'm not too well versed on peppers or vegetables in general.

The answer to your questions is yes. A lot of people prefer green peppers. Dry them, make hot sauce, make salsa, anything you want actually. I prefer red ripened peppers, they are noticeably sweeter.
Peppers are good to eat when they are green but nurture red peppers are more flavorful and hotter
Go to your local grocery store and you’ll find most peppers are sold green. Edit: love the name.
